For some people, vegetables are hard to swallow (quite literally). As kids, most of us find that we have an aversion to vegetables. Is it because it’s healthy? Or because it’s not as sweet as things like…, oh, I don’t know – cake. If vegetables tasted more like cake, I’m sure that we would all love them a little more. However, we’re not that lucky.
If you’re looking for some more reasons that you should eat more vegetables or if you’re looking to try and convince someone else (*ahem* your husband or kids *ahem*) to eat more of those healthy greens, check out the list below:
1. They’re healthy.
Yes, I’m sure that you’ve all heard this before and this may be one of the reasons why you don’t like them very much: healthy = bleh. However, that doesn’t negate the fact that they are packed with macro and micronutrients.
2. They’re a great filler.
3. You can turn it into a challenge.
Challenge your family to a color challenge. See how many different colors of vegetables they can have with dinner every night. Or challenge them to a different color every week.
It’s not that hard to make “eating vegetables” fun. Have your kids go with you to the grocery store and have them pick out a different kind of vegetable to try every week. It will help expand their palate and it will help you work more nutrients into their diet.
4. They’ll make you feel great!
If you start working more vegetables in your diet, you will find that you have more energy. Vegetables will make you feel better about yourself and just better altogether. If you know that you’re doing something good for yourself, your self-esteem will improve as well. The only limit to how good you can feel when you eat more vegetables is you.
5. Vegetables come in all different colors and flavors.
Are you a big fan of mustard? Have you tried the spicy, bitter, mustard-y taste of mustard greens? Like something sweet and tangy? Have you tried pickled beets? Do you like crunchy? Boy, are there a lot of options for crunchy!
If your issue is with the fact that you don’t like the texture of one kind of vegetable, then try something different. There are so many different types of textures and flavors out there. Not only that, but hybrids are being grown (on purpose and inadvertently as well) so even more flavors and textures are available now.
6. Challenge yourself to finding ONE that you like.
There is a gateway vegetable for you. You just don’t know what it is yet. Trying different vegetables will help you find one that you like. You can also try to prepare them in different ways as well: grill, bake, boil, or raw. There are countless different recipes online for everyone to try (for free). Yes, that means that you don’t have to spend money on cookbooks. You can make your own cookbook filled with your favorite recipes.
